These teas are exceptional and they cost quite a bit more, but know that you are drinking something extraordinary. Silver Needle (Bai Hao Yin Zhen) Organic White Tea 2012
Unlike green tea, white tea is never fired or steamed to kill the enzymatic action that causes oxidation. Instead, oxidation of the leaves is prevented by their lack of moisture. The withering process is very long and gradual, thus slight oxidation of the leaves (or buds) will naturally occur. With this slight amount of oxidation, white tea's color is typically not as bright or green as you would expect from a green tea. High quality Silver Needle should be made up of large, healthy tea buds with most of their white down intact. When infused, the buds will turn to a light green color right away. The color of the infusion is like a light honey. When compared to infused green tea, it will appear slightly yellow. The fragrance is light, akin to freshly bloomed flowers. The flavor is more juicy than dry, filling the mouth with a smooth and lingering sweetness. For first time tea drinkers and seasoned aficionados alike, Silver Needle is a very approachable tea. It is easier on the stomach than a green tea and even a long infusion in high temperature water will not bitter the flavor. You will find it very easy to drink and very easy to brew. Unfortunately, there is a strong trend today to accelerate the aging process of puer in order to lower the cost of production and raise the price. Many producers store their puer in super-humid facilities called "Shi Cang," which means "Strong Humidity Warehouse." Others store their puer underground or in a cave. Unfortunately this practice makes puer taste like dirt or compost -- be wary of any puer that tastes like that! The old warehouses act like large humidors, aging and conditioning the tea, while enhancing the natural fermentation of the tea. The term "Old Warehouse" comes from the practice of aging puer in a traditional old warehouse. "Old Warehouse flavor" refers to the smooth, less woody quality of puer aged in this way. The producer has controlled the fermentation process very carefully to yield a smooth, aged flavor as if it had been aged longer, even though it is a new tea. This tea has a clean, sweet aroma with none of the compost flavor of cheaper, commercial black puer. It brews up clear and red like wine, with a soft, smooth, rich flavor that fills the mouth. Right away you will taste black puer's character. This is a wonderful puer to take with you when you travel, to enjoy and to help soothe and settle your stomach. Any of a large group of water-soluble plant pigments that are beneficial to health. Flavonoids are polyphenols and have antioxidant, anti-inflammatory, and antiviral properties. They also help to maintain the health of small blood vessels and connective tissue, and some are under study as possible treatments of cancer. Also called bioflavonoid . The sweetest of the white teas, Silver Needle is made up of only buds from the tea bush. Meticulously separated from the stem, the buds are fanned on to a single layer on a bamboo tray and dried in the sun until 70% of their moisture is removed. The withering process is completed indoors as the tea is roasted over charcoal. During the roast, the tea is separated from the charcoal by bamboo trays lined with paper. The very low temperature drying of this tea is designed to preserve the white color of its buds. Too high of a temperature will make the buds yellow.
Puer tea improves as it ages. Older, more reputable producers make and age their puer cakes in old warehouses that have been in use for many years. These old warehouses have had time to absorb the aroma of tea, and have accumulated larger amounts of tea microbes through the years. Tea microbes help to age the tea and are probiotic to the human body.
